Produced from a two-hectare Dolcetto vineyard that clings to the hillside facing the Castle of Serralunga, this fresh local red comes from eight-year old vines. The best bunches, selected and harvested from the vines at the end of September, are checked on two selection tables before sliding into fermentation tanks and slowly becoming wine.

Vinification Maceration and fermentation in steel tanks for 10-12 days, with brief pumpovers and gentle pushdowns when necessary.
