A jewel of Sion's vineyard, property of Sion's Evêché, Tourbillon's domain has the privilege of an exceptional location.

Between Valère and Tourbillon's hills, these Ermitage vines are ideally exposed to get a liqueur-like wine which represents the Grain Noble ConfidenCiel chart.

The overript harvest depends on the meteorological conditions of the year. Some years, this overripe happens very slowly. Sometimes, the botrytis cinerea, revealing element of the flavor of the Grains Nobles, develops as late as the first freezing.

When the grapes reached the wanted concentration with an optimum of 150° Öchslé, the grapes are delicately pressed. The juice is put in new barrels to ferment. The fermentation lasts over two years.

Straw yellow color with honey highlights. Complex nose with candied apricot flavors.
